Canevel sparkling wines have bubbles that are as subtle and elegant as silk (Setàge).
There are various elements that go into making the perlage so subtle and attractive.
The grapes used are picked by hand and come from soil that is rich in clay, sandstone and marine marl, which produces minerality and intense floral aromas, together with softness and pleasurability on the palate.
The slow sparkling wine process is carried out at low controlled temperatures (12° – 14° C) using selected yeasts. The result is very fine bubbles conferring unique softness and creaminess.
